Spicy Penne with Italian Sausage & Asparagus
I checked back through the financial records and I haven’t done a major grocery shop since 3/10 when the hub was still around. (He works internationally and is gone for weeks at a time.)

It’s kind of a game with me, this cooking my way through what I’ve got stocked in the pantry and freezer until there’s pretty much nothing left. I’m about at the end of the line but STILL! I managed to make a delicious pasta dish for myself out of what was available.

Aidell’s (gluten free) Italian Sausage cut into bits
A chopped onion
Minced garlic
Fresh asparagus (pilfered from my daughter’s fridge before they went over the edge)
Fresh lemon zest and juice
red chili flakes
kosher salt
ground black pepper
olive oil
butter

All of that was tossed around in my cast iron skillet and then I added some cooked gluten free (Jovial) penne and grated the remnants of a nice piece of parm reg over the top.

Delicious! Nutritious! And leftovers for tomorrow.

So today we woke up at 8am because someone said there was free breakfast in the hotel. We find out it’s 18 bucks so we go to McDonalds and then we all get driven to Hoops Dome where out high school team played our first two games. This is Yin You shooting a free throw after getting fouled. I have so many pictures haha and I am so tired and sleep deprived I just choose the first appealing photo I saw. We ended the night by eating all you can eat Korean Barbecue which was amazing. It was the first time I ever ate it and it was pretty cool. You cook the food yourself on this hotplate. After dinner, we just all went back to the hotel to sleep. We have to wake up at 6:30am tomorrow 😦
